The strawberry fruit is being used in food and beverages, besides this, due to different color of the conjugate acids and bases in the pigment, the strawberry pigment extract can be used as natural acid/base indicator. Strawberries contain Fisetin, an antioxidant which can be studied in relation to kidney failure resulting from diabetes and also to the Alzheimersĺ disease. Strawberries are of high nutritional value and it is also a good source of manganese, vitamin C and flavonoids. Strawberry is also a good source of dietary fiber, folate, omega-3 fatty acids, potassium, copper, vitaminB2, vitaminB5, vitaminB6, vitaminK and small amount of other healthy minerals. Strawberries contain many phytonutrients, which work as powerful anti-oxidants in the body. Most of the phytonutrients in strawberry act as antioxidants and anti-inflammatory nutrients, such as cynindins and pelargonindins, hydroxy-benzoic acids, hydroxy-cinnamic acids, tannins, stilbenes and flavanols (kaempferol, quercetin etc.). Strawberry contains chemical compounds i.e. sanguiin isomer a dimeric compound ellagitannin agrimoniin. Strawberry also contains a small amount of salicylic acid, which is an anti-inflammatory compound, and is very similar to acetylsalicylic acid of aspirin. Anaphylactoid reactions to the consumption of strawberries have also been reported, which indicates that strawberry contains some allergen also.
